Last week, I caught a bit of a baking bug, and churned out these little delights. I love that they are super-simple to make and take very little time. I also appreciate that for this recipe, the butter is the star. You can use any kind of high-quality butter. When I made them, I used our homemade butter from the farm, and am now extremely curious what they would taste like if made with some homemade cultured butter. Yum!
ORANGE-ROSEMARY FRENCH SABLÉ COOKIES PREP TIME: 15 MINUTES, PLUS 45 MINUTES COOLING TIME COOK TIME: 14-16 MINUTES MAKES: 4 DOZEN COOKIES
1 cup butter, softened 2/3 cup sugar 3 egg yolks, divided 2 t orange zest 1 spring fresh rosemary, stemmed and finely minced (about 1/2 t) 1/2 t vanilla extract 1/4 t salt 2 cups flour
1. Line two large baking sheets with a silicone baking mat or parchment paper. 2. In a medium bowl or stand mixer fitted with a flat beater, cream butter and sugar together until light and fluffy. Add 2 egg yolks, orange zest, rosemary, vanilla extract, and salt; mix until creamy. 3. Add flour and mix just until dough forms. 4. Divide dough in half. Roll half of the dough to 1/8” thickness between two pieces of parchment paper. Remove top sheet of parchment paper. Using a 2”-round cookie cutter, cut dough into circles, and transfer to prepared baking sheets. Leaving about 1/2" of space between each cookie. Repeat process with second half of dough. 5. Once all dough has been cut, make a cross-hatch pattern on the top of each cookie with a fork. Chill cookies in refrigerator for 45 minutes. 6. Preheat oven to 350°F. 7. In a small bowl, combine remaining egg yolk and 1 t water. Brush cookies with egg-yolk wash and bake for 14-16 minutes, rotating cookie sheets halfway through, until edges begin to turn golden brown.

Thank you for sharing the recipe Ashley,
I saw the picture of them and they look Delicious. Printed out the recipe and putting in a clear cover for my binder. Can't wait to make them. Love Rosemary, it's one of my favorite herbs. |

I forgot to add to the recipe to use the tines of a fork to create a cross-hatch pattern on each cookie after cutting. I've edited my original post to include that detail. :) |

Hope I did them justice. I was baking anyway and made our lime/basil, so why not more herb cookies, so I mixed up your recipe Ashley and they are really good. Different china but same cookie recipe. Thanks so much for sharing. . Peach pie, peach cobbler, Basil/Lime, Snickerdoodles, and the newest Orange Rosemary French Sable Cookies. . Baker's Table was busy today. |

What a wonderful bake day, wonderful "home" smells, wonderful everything Janet. Your scene spells H-O-M-E through and through. And comfort. When I was a girl, I loved walking into a scene like that.
I was glad to hear your combo wild bread worked. I've done that more than once when I was out of a certain flour or didn't have time to mill something.
The girls are getting ready for their school music recital tonight. Miss Lolly is one mellow pup. The kids carry her around wrapped up in blankets and she never ever objects, just cuddles and chills every time you pick her up. And she hasn't barked once.

Priceless pictures of all the girls and Miss Lolly. She is going to be a loving companion to those girls. Just something about a good dog. Alina looks like she's going to hang onto puppy and never let go. Stella and Mia are so pretty in their dresses, I'm surprised Lolly isn't adorned in a big red bow. |
